A Brief Description
Fantasy Fudge is a recipe I received from my mom. It was passed on to her from a family friend, Norma. We often call it Norma’s Fantasy Fudge.
The fudge is very smooth. The sweetness is soft, not excessive. I am always complimented on its flavor.
The process is simple. The most difficult part is all the stirring. It begins easy, but once it begins to boil you still have five more minutes of stirring. When you reach about two minutes left, it really begins to thicken. By the time you hit the five-minute mark, your arm and shoulder are weakened, but you still aren’t done. You add the chocolate and it really gets stiff.
After the chocolate is evenly blended, you are almost there. You add the marshmallow crème, and continue to stir. Now it is as the most difficult to stir. It is like stirring sand with a paddle; you can do it, but it takes quite an effort. The fruits of the labor are tasty.
It is much easier to blend the chocolate and marshmallow crème with some assistance. While stirring, have an assistant add the chocolate and marshmallow crème.
Other homemade fudge recipes tend to be difficult to evenly blend.
Criteria: flavor, texture, color sweetness, melting point, type of chocolate (milk, dark or semi-sweet).
